Our cuisine, with a little patience and many years of care, managed to make a name fot itself about genuine Tuscan “Casentinese” food proposing the exquisite dishes of our land. The ancient preparations derived from rural tradition which follow one another depending from the season, as an example Scottiglia (seven different kinds of meats stewed in tomatoes sauce), Peposo alla Fornacina (braised beef with red wine and pepper grains), Tortelloni di Patate (big ravioli filled with potatoes and a bit of bacon), Carabaccia (red onions soup) go together with classic dishes like various kinds of ham and salamis (our production), tuscan canapes, spelt soup, Ribollita (vegetable soup), Pappa al Pomodoro (tomatoes bread-soup).
